Chicken Drumsticks with Barbecue Sauce


Barbecue sauces aren’t just for barbecue. There are many different types available in various regional styles. These sauces add a big flavor to the dish and are perfect for a quick and easy dinner. There was a bottle of Wegman’s Memphis style barbecue sauce in my pantry and a pack of chicken drumsticks in the refrigerator. I pulled out a pressure cooker, and the dish was ready in 30 minutes. My husband particularly liked the spiciness from the chipotle chili powder, my secret ingredient, which also adds smokiness to the sauce. If you can’t take the heat, smoked paprika may be a good substitute.

Chicken Drumsticks with Barbecue Sauce Print Recipe

5~6chicken drum sticks (1~1.5 pound)   
2 Tbspoil
1onion, chopped
1 cupyour choice of barbecue sauce
1 cupvegetable or chicken stock
1/4 tspchipotle chili powder
1~2scallion (optional), chopped 

Directions
  1. Remove the skin from the drumsticks*. In a pressure cooker (or a pot), heat one tablespoon of oil over medium high heat. Brown the drumsticks all sides, transfer to a plate and set aside.   
  2. Add one tablespoon of oil in the pressure cooker and cook the onions until transparent, about 3~5 minutes. Add the barbecue sauce, the stock and chipotle chili powder and bring to a boil. Put the drumsticks back into the pressure cooker. Secure the lid and bring up to pressure. Reduce the heat to medium-low and cook it for 15 minutes (if you are using regular pot, cook it for 30 minutes.) Allow the pressure to drop by just turning off the burner and letting it cool down naturally, or by running cold water over the top of the pot.
  3. Place the chicken on a plate and garnish with the scallions.
serves 2~3

*This is a healthy option. You can leave the skin if you wish.
